HomeState is a Texas Kitchen in California sharing breakfast tacos, queso, brisket, house-made flour tortillas and genuine hospitality. In 2013, Briana “Breezy” Valdez founded HomeState in Los Angeles with the dream of sharing her Texas identity through food and hospitality.

Prep Cooks report to the Commissary Manager, but regularly takes direction in daily tasks assigned by the team lead on duty. All members of the team should inspire and embody HomeState’s culture, mission, and core values. Prep Cooks contribute to the HomeState community by implementing standards of quality and cleanliness. This shift is generally scheduled at 3:00pm-11:30pm

Responsibilities
ESSENTIAL JOB FUNCTIONS
Health, Safety & Compliance
* Promote, work, and act in a safe manner consistent with the mission, visions, and core values of HomeState.
* Understand and comply with standard portion sizes, recipes instructions, builds, cooking methods, quality standards, packaging / fulfillment procedures and kitchen rules, policies and standard operating procedures (SOPs).
* Promptly inform team leads when equipment is not working properly and when supplies are getting low.
* Maintain regular, predictable attendance, which includes attendance at all scheduled employee meetings.
* Work closely with other team members through performance of daily tasks to support each other and promote teamwork and a healthy culture.
* Fully understand and exhibit the HomeState culture, embodying our mission, visions and core values.
* Report any safety concerns/incidents to management in a timely manner.
Food Production, Receiving & Storage
* Refer to the Daily Prep List at the start of each shift for assigned duties.
* Prepare (wash, butcher, peel, trim, slice, juice, and/or cut) a variety of foods such as meats, beans, fruits, vegetables, and doughs, according to recipes, instructions, SOPs and operating procedures of kitchen equipment using manual and/or electric appliances.
* Review quality of product once it is cooked, mixed, or being portioned by conducting proper tasting procedures, and report any quality concerns/doubts to the management team promptly.
* Portion and pack food products according to SOPs in vacuum bags, by wrapping or placing directly in the required container.
* Store food in designated containers and storage areas to prevent spoilage. Label food storage containers by following proper protocols.
* Assist with receiving and storage of all incoming raw materials from vendors.
* Carry food supplies, equipment, and utensils to and from storage and work areas.
* Assist and support kitchen team with various tasks as needed, and provide fellow team members with assistance as requested.
* Record, track and write counts, temperatures, quality, and other metrics as required in SOPs.
Cleaning & Organizational Duties
* Clean and sanitize work station area including tables, shelves, walls, griddles, fryers, mixers, burners, combi oven, refrigeration units and vacuum sealing equipment.
* Remove trash and clean kitchen garbage containers.
* Load utensils, containers, and other kitchen tools into dishwashing machines and help keep dish area organized and neat.
* Clean, sweep and mop as directed to assist in maintaining commissary spaces, including common areas like break and restrooms.
* Assist and support the kitchen team in the opening and closing the kitchen sanitation tasks.
Experience
* 1-2 years kitchen experience in the restaurant and/or catering industry.
Requirements
* Valid Food Handlers Certification Card (within 30 days of hire).
Physical Requirements
* Ability to remain in a stationary position for long periods of time (6 or more hours per shift, excluding break times).
* Ability to lift, push, pull, or carry up to 40 pounds (kitchen equipment, bulk food items, etc.)
* Ability to frequently bend and reach overhead.
* Ability to lift and use utensils (including chopping), and grip equipment such as pots/pans or other kitchen equipment.
* Ability to work in fluctuating temperatures ranging from hot (high radiant heat areas, ~ 82°) to cold (food storage areas, ~ 37 °).
* Ability to work near open flames, hot cooking equipment, and steam.
* Ability to perform certain repetitive motion activities (e.g., utilizing certain utensils such as ice cream scoop for extended period of time or placing items on sheet trays in repetition.)
* Ability to work in tight spaces.
* Ability to recognize, perceive, and/or comprehend directions and spatial cues (e.g. “hot,” “behind,” “corner,” knife,” etc.) and communicate same as needed.
* Ability to sit, squat and kneel occasionally.
* Ability to work in a constant state of alertness and safe manner.
* Ability to regularly move around the kitchen with full range of mobility
